Final update, I suppose.  I decided to avoid running the imapd.rc file 
competely, and ran the couriertcp (etc) command manually.  I was apparently 
successful, since the command ran without error.  Here is that command FYI:

/usr/local/libexec/courier-imap/couriertcpd -address=10.0.0.1 
-pid=/var/run/imapd.pid -stderrloggername=imapd -maxprocs=50 143 
/usr/local/sbin/imaplogin /usr/local/bin/imapd Maildir

(remember to change the IP to your IP)
