It seems you have the same problem me and Rio had some time ago. (Actually I don't 
know whether Rio got his server working or not. I'm hoping no news is good news in 
this case :-) )

Here's my two cents (I'm recycling my previous answer to Rio -- this may not work for 
you but my server has been working rock solid):

were caused by a bad libvpopmail.a.

This is how I finally got it working on RedHat 7.3 (I'm using MySQL backend with 
vpopmail -- if you don't, then drop the "--enable-mysql=y" from vpopmail configuration 
and propably the "LDFLAGS" stuff from courier configuration, too):

vpopmail-5.3.9:

# ./configure  --enable-learn-passwords=y \
> --enable-clear-passwd=y --enable-mysql=y \
> --enable-roaming-users=y --enable-file-sync=y

# chmod 644 /home/vpopmail/lib/libvpopmail.a

Needs to be done since courier-imap should be compiled as a regular user and 
libvpopmail.a is 600 by default.

courier-imap-1.5.3:

$ LDFLAGS="-L/usr/lib/mysql -lmysqlclient -lz"
$ export LDFLAGS
$ ./configure  --with-authvchkpw

Weirdly, sometimes my users cannot login through IMAP, the error says wrong 
password, but if the users use pop3, they always able to log in.

I am running courier-imap 1.6.0 on RedHat 7.3 using vpopmail with mysql on the backend 
for authentication. There is a contention issues with authentication.  Auth will 
intermittently fail, it seems to be better when the daemon first starts. I have tried 
to chase the problem in vpopmail and mysql but I have not been able to isolate it any 
further back than the authdaemon. The mail system supports about 200 users.
