Courier imapd already has this capability. By default (at least in the version I'm using) it purges mail from the Trash folder when it reaches seven days old. You can configure it to automatically purge other folders, or change the age limit, if you wish. Look in the 'imapd' configuration file, and search for 'TRASH'. That should turn up a few configuration values related to this feature. IMAP_EMPTYTRASH is the main one.
