Is it possible to install only the IMAP server and NOT even the POP server
shipped with Courier IMAP?

There are separate startup scripts for the IMAP and POP3 servers. Just run the imap script, and don't run the pop3 script. If you want to even get rid of the binary, for whatever reason, just remove it after installation.
