What is the problem here? Courier is successfully receiving email addressed to a local user. I can't say anything about the lack of spamassassin filtering, check how it's set up. The contents of the To: and From: headers are for information to the user, and have very little to do with how the mail is delivered.

Courier does not function as an open relay unless you tell it to. Case in point:
