I simply renamed /usr/lib/courier-imap/libexec/authdaemond.ldap to authdaemond.ldap.orig. This will prevent authdaemond from find authdaemond.ldap and thus it will start authdaemond.plain.

Or, follow the instructions in the authdaemonrc configuration file, and change the appropriate setting.
