You're looking at the wrong server then. Courier doesn't put "5.7.1" in its responses.

Sorry I'm quite a newbie and I'm totally confused here.
I installed courier-mta as debian package and It seemed to have replaced sendmail. If I understand you right, I'm still getting response from sendmail and not from courier-mta on my box on port 25 ?!?
Here is my dpkg -l sendmail :
