I use Sharity to mount the Windows CIFS share in my server's filesystem, then just gtar directly to a file in the mounted Windows filesystem.

Nothing wrong with backing up files to a Windows machine; nothing says that if the source machine is Linux the destination machine has to match.
What if instead of simply copying the files over you instead ran the user's maildir or the site's maildir tree through tar/bzip/gzip/zip/whatever?
Out of curiosity, why would you copy the files as they are one by one instead of a large, compressed chunk?
