Pardon me and thank you Bill, you're right. I was being shortsighted when interpreting the contents of that env var just now.

On a potentially related note:  I have two machines running courier.  One
of them logs like this:

Feb  7 18:34:07 basil courieresmtpd: started,ip=[66.11.173.61]

while the other like this:

Feb  7 18:34:07 minty courieresmtpd: started,ip=[::ffff:66.11.173.61]

This seems to have something to do with ipv6, but neither machine has an
ipv6 interface running nor is configured for it.  I prefer the former
style of logging.  What configuration am I overlooking which affects this?

The IPv6-style formatting is used if the O/S is capable of supporting IPv6, even if no IPv6 interfaces are actually turned on.
