"/SECURITY=STARTTLS" is a courier only extension to smtp security. It doesn't mean to use STARTTLS. Courier will *always* use STARTTLS if the mailserver at the other end advertises it (which gmail does). Just remove the "/SECURITY=STARTTLS" from the line in esmtproutes and everything should work just like you want.
