See the "courier" man page section on "queuetime". Make it longer if you need to.

That's closing the barn after the horses are already gone. Changes to queuetime take effect for new messages, but existing messages' expiration time will not change.

The default expiration time of one week is more gratious then it needs to be in the first place.
