Where <openize.de> is a domain of mine and therefore pings to the
servers ip-address. Now I've shut down courier and would like to ask
here, if this is a known problem and if courier is indeed open for
relaying when using something like "name%adress.com@<local-domain>.
Even if this test is a false positive I would rather avoid this
positive result if some spammer or abuser is testing my server as an
open relay. What should I do?

You should undo whatever you did to Courier's default configuration.

Courier's default configuration will not accept mail to such an address.
