The option TCPDOPTS="-stderrlogger=/usr/local/sbin/courierlogger -noidentlookup -nodnslookup" as adviced in courier-mta faq had changed nothing. But after a fresh installation of freebsd and only required dependances from FreeBSD ports and an installation of courier from sources instead of FreeBSD's port, it works fine now. May be I did something wrong before, with courier from FreeBSD's ports, but an installation from sources solved it.
