Just because many things are possible, this does not mean that you need or want them. The default config will do just fine for many people. Especially if you don't use incoming SMTP (and so don't have to worry about IDENT lookups, blacklist configuration, greylisting or thinks like that). Have a look at http://www.courier-mta.org/install.html. More than half of the chapters are marked "OPTIONAL" and that is meant like that. :) The sections about configure/make/install (Everything from "Preparing for installation" up to "Post-installation checks") should be obsolete if you have packages from your distro.
