I´ve done the same work in the past year with a Debian Mail Server and I was able to include trash in quota making an apt-get source courier-base download. Then adding in the /courier-0.47/debian/rules file the –with- trashquota option and recompile courier.
I couldn´t find the source courier-base package for Centos yet.

CentOS probably builds RPMs directly from the tarball using rpmbuild.
