Maybe try reselecting the "Sent Messages" folder: Settings / Mail / $Account / Account / Advanced / "Sent Mailbox", choose "Sent" (or maybe choose a different folder, then choose "Sent" again to insure that setting sticks).

Second, this might be a case of the phone wanting to save a previously sent message in the wrong folder "Sent Messages" (ie: it has a pending save to complete, but the target folder cannot be found).  Create the folder, let the iPhone do its thing, then delete the folder.
