Its always best to give 1 server 1 core. I don't believe srcds handles multi-core well or at all. Not sure about that. But in a server world its always good practice to run 1 program/server on 1 core. I run ESXi and have 8x2.3ghz and 16gb. I run 8 servers in total on the host and have no issues out of my csgo servers. Each has 2 gb.
