Here's the simple answer, and granted I'm not so much into email design as
I used to be so I might be missing something here.
Answer: For desktop - put a 1x1 transparent gif image where you want the
image to be in your mobile / tablet versions. No worry about it showing the
image in desktop view.
For mobile - give the 1x1 pixel a background image  (the image you want to
show). Size each instance of the image per your targeted screen width as
you cannot resize the background image using styling...width="xxx" will
only show/hide more or less of the image. Set repeat to none and you should
be good to go.
