This was taken from a vmware forum:

- Workstation allows you to create virtual machines while Player doesn't.
- Workstation allows you to create any number of snapshots as a way to
save the state of the virtual machine at any given point in time.
Player does not allow you to create snapshots.
- Workstation allows you to revert to any of these snapshots with the
click of a button from the Snapshot Manager interface. Player does not
allow you to revert to any snapshot.
- Workstation allows you to create a Team to replicate a multi-tier
configuration. You can then power on this Team to power on individual
virtual machines in the order you specify. You can view thumbnails of
each of the virtual machines in the Team and furthermore, you can
change the network bandwidth and packet loss rate of the network
segment that connects any two virtual machines in a Team. None of this
functionality is available in Player.
- Workstation allows you to create full and linked clones. Player does
not allow you to do this.
- Workstation allows you to add additional devices to a virtual
machines. Player only allows you to modify existing devices.
- Workstation allows you to record movies i.e. record all screen
activity. Player does not.
