Glad you enjoyed it. If you want to make a healthier version, you can
substitute honey for the corn syrup and leave out the brown sugar.

‘Tailwind Granola”

1/2 Cup peanuts
1/2 cup raisins
1/2 cup sunflower seeds
2 cups raw oatmeal, quick or old fashioned
2 cups toasted rice cereal like rice krispies

1/2 cup peanut butter
1/2 cup packed brown sugar
1/2 cup light corn syrup
1 tea. Vanilla

In a large bowl, mix the first group together.
In a microwaveable bowl mix the 2nd group except the vanilla. Microwave the
peanut butter mixture for 2 minutes. Stir and add vanilla. Add to the first
group. Mix well.

Pour into oiled 9 x 13 pan, press firmly. Let stand at least an hour (if you
can wait that long!) and cut into squares.

I felt like Scotty from Star Trek. “Cpt. Kirk, I’m giving it all she’s got,
but if we push any harder, the reactor’s gonna blow!” I stuck to our 3 min
pull rule and thankful Tim, Kinnie and Vino didn’t.

Thought since we’d all rode together for 56 mi, that we’d come in together.
But, Jeff must have wanted the prize money and blasted off from the red light
at Nash/Ward Blvd. But, Tim L. did a “Cav” at the end and took the top prize.

Thanks to all who organized this year’s ride and all the vols at the SAG stops.
Very cool having the Sheriff’s escort all the way to Simpson’s place.

And, I apologize to Kinnie for mentally cussing her out every time she did a
pull into the wind.

Tim's version.

How about that Police and Sherriff escort all the way to the whirligig farm.
Awesome! The lead group had like 10 riders to start but every time KP got up
front she would toss a few off. :) Lamm road was a blast cruising with a
tailwind at 25+. Not a good sign for things to come. We leave the first SAG
stop with KP cruising 23 mph out of the box. We get her to slow down and wait
for others but slow is still 20. By the time we get to 581 the lead group is
down to 6 riders. Now we are riding straight into 20+ mph winds. How bad is
it? Strong man Nick is pulling 16 mph downhill! The winds were brutal. KP is
back out front. Oops there goes another rider (John)off the back. We are now
down to 5. CoWs Tim S., Nick and I, with adopted CoW, Kinnie. Jeff from
Spring Hope rounds out the group as we pull into the second SAG stop. Kim is
my favorite support person today. Granola
was A++++++++. We continue to battle headwinds all the way to 97. The group
is working really well together. No breakaways with this wind. 97 is a tad
easier as we turn east but total relief doesn't come until we turn south
towards Cliftonville. Back on 58 our group is still together, but KP's turn is
up and sure enough she tosses Tim S. off the back. He pulls up limping with
cramps. We share no pity as we continue on. Back on Nash Street Jeff makes a
few futile attempts at dropping the pack. Maybe next year! We finish up with
a 19.7mph average. The wind wasn't giving out a 20 today! Great ride and
great company. Recovery ride tomorrow!
