There is no circular dependancy hell, really...

If you add one of my PPAs and do apt-get build-dep darktable, you
should be fine, assuming you are on a fairly recent version of Ubuntu.

Where does it go wrong exactly?

Maybe you don't have dpkg-dev / debhelper installed?

When rebuilding package sources, the dpkg-buildpackage should tell you
what you are missing.
