What "z" does in fact is fully zoom into the image under the mouse cursor. If you release the key it goes back to the original view. "z" does not switch to fullscreen mode. That function is linked to key accelerator F11. The bug (just discovered): "z" does not work until you have once clicked on one of the thumbnails. Thanks. It works as you describe (and is a nice feature). Concerning the overexposed shortcut "o" (which only works in darkroom mode): maybe you have an image without over/underexposure. In that case you can't see any difference. Normally underexposed areas are given in blue, overexposed ones in red. Nope. Clicking on the toggle over/underexposed button or turning on the overexposed module gives me plenty of red. But pressing o doesn't act as a toggle. It seems to do nothing.
Please check if the keyboard shortcut is activated per default. You just go into the preference dialog, which can be reached by pressing an icon at the top that looks like a gear wheel. You should see something like in the attached screenshot.
