OK, now it's clear. Have a look into the other tabs of the parametric mask. Each tab has two gradient sliders for input and output and each has its individual polarity button. In order for darktable to work as you intend you need to make sure that *all* polarities are set to positive or negative, respectively. For your convenience there is a toggle functionality when you press the black&white icon close to the colorpicker. Pressing it will toggle all polarities - of each individual channel of parametric masks and of the drawn mask as well. It will also switch between inclusive and exclusive combination mode.
