will darktable correct the distortion of a fish-eye lens?
Yes: see the "lens correction" module (well, assuming that your fish-eye lens
has less than 180° field of view, otherwise removing distortion is basically impossible).
If your lens is not supported, you can get it calibrated:
http://lensfun.sourceforge.net/calibration/

However, note that some "distortion" is unavoidable with very short focal lens:
if you remove the optical distortion then straight lines in reality will remain straight
in the picture, but you will still get the feeling of having the corners stretched. With
an ultra-wide lens (very little optical distortion), I often _add_ distortion to make the
image more natural (typically for landscape).

In lens correction module, don't hesitate to cycle through most values of "geometry" option to find the best one for a particular case.

Setting the geometry to "panoramic" often gives good and natural results in landscapes.
