A good starting point for receiving ideas on ways to process your image
would be to upload the image to the PIXLS.US forum where there are
numerous darktable people who will gladly work to find the best solution
for your very nice portrait. ..... https://discuss.pixls.us

At this point, except from camera being on Av mode, I don't remember any other
settings such as exposure changed from default. I did turn on the flash as
camera prompted me to turn on the flash even if there was plenty of light in the
room.
I have uploaded one CR2 file at
https://drive.google.com/file/d/1CUTt7tEo0rmKwP99akAmJaV8dpJr6TBz/view?usp=sharing
I've made many mistakes of that order, the most dramatic was a day's outdoor
shooting with the camera set to incandescent light. AWB solves many sins!
but yes, darktable managed to correct that.
Grain? Well there are settings/tools for that.
Have you read the user manual? Try section 3.4.4
Have you googled for "darktable remove grain"
That turns up a couple of videos.
For example: https://www.roberthutton.net/archives/160
I do note that the file you uploaded has a slight problem. Some of the settings
/should/ be determinable by looking at the raw file's EXIF values. But when I
download and scan I get an error.
Perhaps you could check and post the EXIF values from the original.
