on the first link, scroll to the very bottom, there is the link to the
pdf documentation.
For Linux it is very much dependant which version/distribution you are
using. For Ubuntu for example you need to install the correct repository
and then install the darktable version from that repository. I am
running a dt 3.0 on an Ubuntu 18.04 workstation. No need to compile
anything.

Further more, the referenced link to github has, at that location, a
link to another location from which should be able to download the
source - except that this link merely references itself, so I never
find the code for DT 3.0.0 or the PDF which describes the application.
What am I doing wrong?
