I run dt on multiple machines (in multiple locations), I update the Arch
systems with the latest git on a very regular basis. The suggested idea
of using an external dive for the imagery and config files is appealing.
# darktable --configdir "/path/to/server/config/darktable" --cachedir
"/path/to/server/cache/darktable"
Would there be any problems created during an update? ... Would latency
be a significant problem? Could all of the config data be located on the
external drive?

if you are only one person using one machine at a time you might set
the config-directory (and also the cache-directory) to the path on the
server:
e. g. like this:
# darktable --configdir "/path/to/server/config/darktable" --cachedir
"/path/to/server/cache/darktable"
