I fully agree that exposing the full list of noise profiles is not a good
thing to do, but perhaps something to filter by camera brand>model>ISO
could work.

I've tried editing the exif using exiv2, but darktable doesn't read those
values somehow. Or am I doing it wrong? I'm running these commands in the
directory of the dng file:
exiv2 -M "set Exif.Photo.ISOSpeedRatings 3200" 000001.dng
exiv2 -M "set Exif.Image.Model Canon EOS 60D" 000001.dng

I ran exiv2 -pt on the file, and I do indeed see that the values are what I
specified (ISO 3200 and Canon EOS 60D), but darktable still reads them as
ISO 0 and model "Canikon"
