Creating XMP files doesn't alter the images. It's very easy to not do
anything to an image, just don't apply darkroom changes to it.

Darktable is fully non-destructive (original images are never touched)
so if you're not overwriting your source images (which is hard to do
non-intentionally) or changing darkroom settings your images should be
fine.

I don't see what you mean here. The fact that an image is exported
doesn't change its settings and darktable will by default write the
XMP with default settings even without the export happening.

Is the problem overwriting jpgs or some other problem with presets
being applied? One thing that perhaps would be sensible is to never
overwrite an image that's part of the database itself, so you can
never overwrite an original jpg with a raw conversion even if you
enable overwrite on export.
