I edit an image in the darktable mode. There I change the base curve to
whatever I want. I do other edits as well. Then I go to the history stack on
the left side of the image and click the button "Create a style from the
history stack" (to the right of the "compress history stack" button). I save my
new style and then apply it when I load a new image (left-ish location at the
very bottom "quick access for applying any of your styles"). So my style is not
the default per se, but is very easy to apply. Moreover I don't want a single
default, I have a few styles (landscape, portrait, standard - each may have
their own base curve) which I apply according to the photo.
If you are new to DT I highly recommend to search for instructional videos on
youtube. Personally I found the most helpful the ones from Robert Hutton. The
official DT documentation is pretty good, but may be too difficult for a
beginner.

How did you create your own presets and made sure they were used as a default,
which tools do you mean? Can you provide a link to the corresponding
documentation? I couldn't find that myself yet.

I had exactly the same results. I found the standard Nikon curve to be too much
for skin colors from D610. It also tends to blow out highlights and plug the
shadows. So I created my own preset which used the Neutral curve and set the
preset as default. Then I decided to try full customization. I made a bunch of
RAW+JPEG shots using the camera presets (Standard, Vivid, Landscape, Portrait)
and used the DT provided tools to generate the corresponding custom curves. I
found the tools easy to use and generated curves to be pretty good. I now use
them exclusively instead of standard Nikon or Neutral ones.

Hi,
with my Nikon D610, I recently found that I often get much better color results
if I change the base curve to Neutral or completely deactivate it (and just
ramp up the exposure), especially for skin colors, but also for other colors
like the blue of my son's winter jacket, :-) which often looks completely
overblown with the default Nikon base curve.
But I couldn't find a way to change the default base curve or deactivate it by
default. Is this possible somehow?
