So, that pretty much rules out DP as a culprit.

Eric, I ran through your checklist and everything is OK. I
tested 3 different computers at the Health Center. In the
evening I reproduced the exact same problem at home with 2
computers of my own. The cable was tested too. Hard disk space,
config.sys and autoexec.bat are all OK.

I spent this morning on site doing more tests and gathering
error messages. Although I'm no expert, it sure sounds like the
problem is in file sharing. Here are some error messages. From
the server: cache error, "disk write protected". From the
client: "Not ready reading drive G", and also this one from DP
itself: "Network error [..] database files can't be accessed
[..]".

FreeDOS has its own share.com, specific to its kernel.

So now it's over to the FreeDOS discussion group.
