If you dig around the DOSBox Turbo settings a bit, you'll find an option that lets you adjust the screen scaling for landscape mode. That will probably fix your cropping issue.

Not sure about what you're seeing from Hacker's Keyboard. There should be an Fn key that gives you the F1-F12 keys, plus some of the other special keys. Normally the cursor keys are always present, but I've only ever used it on 7-8" tablets, so maybe it automatically adapts to smaller devices. There may be some settings you can adjust to customize the keyboard's appearance/behavior.

I would only need to browse the data and not update anything on the phone but would like to do look-ups, or something similar, from more than one field.
