Jon,
RidgeRun SDK for DM355 currently uses his own bootloader: rrload (in
near future we will ship full u-boot support too).
rrload has his own UBL that is specifically designed for DM355 and you
can take a look on what needs to be implemented (I found that code
easier to read than uboot). However you will need to dig on the code
as we boundle the UBL to the bootloader image (so the bootloader can
save himself and the UBL on DM355), instead of using an app descriptor
as TI's UBL does.
On the SDK you will find also scripts to attach OCD to the DM355 and
the emulation settings required (anycase you can ask me).

I have a hardware JTAG device on the way to try and get me started

OpenOCD and GDB, but I haven't hacked boot loaders or ARM assembler
before and am generally in over my head :)
If anyone has any clues or could confirm my suspicions e.g. comments
like "yes we all use DM64xx, good luck modifying the UBL's", or even
better "here's an opensource DM355 UBL!" then I'd be glad to hear
them.
