The man pages will give you the best information.  You can also see the
list of options by

 # amixer --help

I attached a few quick examples for your reference.  amixer,without any
parameters, gives you the full list of controls.  On my dm355 board, I
have the following output.

# amixer
Simple mixer control 'PCM',0
  Capabilities: pvolume
  Playback channels: Front Left - Front Right
  Limits: Playback 0 - 127
  Mono:
  Front Left: Playback 112 [88%]
  Front Right: Playback 112 [88%]
Simple mixer control 'Line',0
  Capabilities: volume
  Playback channels: Front Left - Front Right
  Capture channels: Front Left - Front Right
  Limits: 0 - 9
  Front Left: 1 [11%]
  Front Right: 1 [11%]
...


If you want to look at specific control do (I use "Mic" as an example)

# amixer sget "Mic"
Simple mixer control 'Mic',0
  Capabilities: volume
  Playback channels: Front Left - Front Right
  Capture channels: Front Left - Front Right
  Limits: 0 - 9
  Front Left: 9 [100%]
  Front Right: 9 [100%]

To change the value do (again using "Mic" as an example)

# amixer sset "Mic" 5
Simple mixer control 'Mic',0
  Capabilities: volume
  Playback channels: Front Left - Front Right
  Capture channels: Front Left - Front Right
  Limits: 0 - 9
  Front Left: 5 [56%]
  Front Right: 5 [56%]
