Ahh the weather is supposed to start getting crisp soon and it'll be time for some comfort food. Nothing beats a hot bowl of something steamy to take the chill off. And you don't have the polish the big ol' stock pot and spend all day in the kitchen to whip up some great soups and stews. Today's easy WHITE CHILI recipe with chicken proves you can do it on the fly without too much trouble. Never heard of White chili? Yep it has a chicken broth base with white beans (thus the name) rather than a tomato based one and it a great variation on the usual one. Enjoy!
INGREDIENTS: 2 cups chopped onion 2 cloves garlic, minced 1 tablespoon olive oil 2 15-ounce cans white beans, drained 14.5 ounce can chicken broth 2 4-ounce cans diced green chiles 2 tablespoons Italian seasoning 4 cups cubed, cooked chicken breast 1 cup shredded Monterey Jack cheese 1 cup chunky salsa (mild or hot) 1/2 cup chopped fresh cilantro DIRECTIONS: In a 4-quart pot, saute the onion and garlic in oil until onions are tender. Stir in beans, chicken broth, chiles and seasoning. Bring to boil; reduce heat and simmer 10 minutes. Stir in chicken; heat through. Garnish each serving with cheese, salsa and cilantro.
