Actually this sounds a little odd to me
My understanding is theres 3 VM's
2x mysql servers
1x dbmail server

you are basically swapping mysql servers yes?

The cpu trace is of the dbmail server?

You shouldn't see an increase in cpu time on the dbmail server if the database is taking longer to respond to querys.
sounds like something is up there.

yes - it looks like you are correct here. CPU does include iowait i believe.. 
and it has settled down to normal now :)
