consistently or incidently? How many users do you serve concurrently?
How many connections does the connection pool contain
(max_db_connections). Try to get a feeling of what is going on when the
problem arises. Using strace and netstat you can get an idea of what the
dbmail process is doing, and how many network connections are open. Also
check the load on your database server.

Maybe there is a configuration problem.

If you server many users concurrently over IMAP (> 100) a connection
pool of say 5 may be a tad bit smallish. You can tell by looking at the
active database connections. If there are no idle database connections
in the pool most of the time, increase the pool size. If most of the
connections are idle most of the time, decrease the pool size.

Never just set the pool size to a very large value! The pool size also
determines the size of the thread-pool. Having many threads in the pool
will decrease the performance dramatically, mostly due to CPU scheduling
and context switching.

The default value of 10 for the pool size may even be on the high side
for most installations. Ymmv.
