I've done more tests in kvm, and will reinstall on the actual box later
and re-submit another installation report. In my tests, /etc/fstab was
never filled with hdd entries, but that's not an issue, zfs does mount
things anyway.

One problem, however, is that zfs needs libexpat and libsbuf which are
in /usr/lib. It's thu still unable to mount /usr...  I have also an
issue with dhclient, which looks for libipx which is in /usr/lib too,
while dhclient gets started before /usr is mounted.
