Same problem here, though it only seems to appear in the graphical installer 
but not in text installer. And cryptsetup is also missing in initramfs.

Steps to reproduce:

I just reinstalled a system using a currently downloaded version  
debian-live-8.1.0-amd64-xfce-desktop.iso from USB stick. 

I tried setting up the system using the graphical installer by clicking the 
installer icon on the desktop of the live system. I could create my encrypted 
disks (with LVM on top) using the partition tool provided by the installer. 
After the installation finished successfully I was unable to boot because 
initramfs was missing both LVM and cryptsetup.

I then tried the text installer provided on the same installation media, erased 
all data on the disk. I again created an encrypted disk with LVM on top. After 
installation Iwas able to boot the system without any trouble.
