The cancel button would be very confusing. At least to me. If you do not want to be confused, don't back up ;) Each displayed message should clearly show which step is currently processed. IMO being able to go back to main-menu is very important. If you are confused, it is not a problem, go back and answer questions again; your previous answers were remembered (otherwise this is a bug in cdebconf) and you just have to validate them.
