I don't understand why it allowed you to proceed at all. ;-) One way to cheat is to configure some partition sheme by partman and then to change it manualy acording to your needs. Then the system will know that partman is configured and will not restart it. However in order not to proceed directly to the installation of the base system before you could setup your own version of /target the installation process has to be in expert mode.
