With multiple accounts defined in .offlineimaprc, it would be really
useful if they could be synchronised in parallel. However, an
offlineimap instance seems to work with a single lock file,
preventing two independent synchronisations from running at the same
time.

I believe that offlineimap can now synchronise multiple accounts in
parallel.

Please see the below snipet from
/usr/share/doc/offlineimap/examples/offlineimap.conf.gz

You need to explicitly enable this functionality.

# Offlineimap can synchronize more than one account at a time.  If you
