Hi Yves-Alexis! I ran into the same problem and I think the only real solution is switching over to sbuild which most Debian people and buildds use anyway. It's also faster (especially with btrfs snapshots and easier to set up.
pbuilder always had the problems with certain pre-dependencies which required certain debhelper packages to be installed outside the chroot for the package build to work. It also has long-standing issues like this one [1] which prevents pbuilder to properly work with gbp.
