Interesting. What host filesystem it is, where your initial image is
created on? Is it xfs by any chance?

Ok, so it's guest data corruption issue.

Would you be willing to run a version of qemu-system-x86_64 I'll
build for you? I can sign it with the same pgp key I use to sign
my debian package if that's okay with you.
