That's not really possible without explicitly listing all of the gnome 2 packages in /etc/apt/preferences. What I do however I just use aptitude. I've put stuff from experimental other than the gnome 2 stuff on hold (use '='). BTW, you want to use the "gnome" package instead of "gnome2" now. I've also put up a little note about this on the gnome2.html page.
