This is the magic of Debian -- you indicate what you want, it identifies what you need to install and selects it for you (but allows you the final option to go or not go with it -- this isn't Windows).
Select the applications and features you want. Debian will work out the dependencies and select the packages required to support them. My suggestion is to build up your system slowly -- install a few packages, get them configured, see how things work, then add more features as you desire. It usually takes me a couple of days to a week to get a new system up and running from scratch to the point I'm not making significant changes to it. Yes, you can use Debian from the get-go. And to throw in my own window manager recommendation -- WindowMaker gives a clean look (http://www.windowmaker.org/), without sucking major resources. It's currently drawing about 3 MB on my system.
