'ssh' is "secure shell". Think encrypting all the data that passes between two computers.
It does more than that, but that is what it is known for. You can tunnel any other connections through it, such as X, whatever. Encrypted, authenticated. Its nice. http://www.ssh.fi/sshprotocols2/ has more information.
