See the man page for update-mime(8).

Basically, you create a file in /usr/lib/mime/packages .  There is probably 
already a file in there called "xv", in which case you just need to change 
its priority.  Priority ranges from 0 (lowest) to 9 (highest).

Once you've made the changes, just rerun update-mime.
