I don't know about pine, but with mutt I have :

    my_hdr "From: [EMAIL PROTECTED]"

even though I am sending on one of the cs machines, my from header is
set.

An alternative, with exim, is to put your username in
/etc/email-addresses so it adjusts the From: for you.
