Change the lines in /etc/init.d/dhcp that look like
start-stop-daemon --start --quiet --pidfile $DHCPDPID \
--exec /usr/sbin/dhcpd
to
start-stop-daemon --start --quiet --pidfile $DHCPDPID \
--exec /usr/sbin/dhcpd -- eth0 eth1
where eth0 eth1 are the interfaces you want the daemon to worry about.
